It's really pretty funny.

I made the exact point as soon as this was announced that it would be cumbersome and expensive to do both vegan and dairy at the same facility.

He disputed it but fair enough, I have no experience running such a facility.

Then along comes someone who has run the exact facility in question and he still won't concede the point. Now that's delusional.

It seems his only counterpoint is that it must be possible (irrespective of the technical barriers you have clearly stated), because why else would they sign up for it?

Well for starters, what they signed up for doesn't even guarantee that any of this vegan formula will ever get made in this facility. There is no minimum order and it seems that AHF is just an optional supplier that Sprout could use if needed.

So one good reason for AHF to sign up to this is to look like they have done something without having to do much at all.

And lastly, I don't think anyone here is saying that it would be impossible to do. It is simply that it would not be margin friendly, and also potentially still involves some risk to quality control. But such is AHF's situation that they are open to it in spite of that.
