Everyone jumping on the Mex bandwagon. KFC are the latest here. There's low barriers to entry with this food. Take whatever you sell normally, add some corn chips, a dollop of salsa sauce, melt a pinch of cheese and presto: Authentic South American cuisine! People in Australia won't know the difference.
