There are many possible scenarios about what is happening here , there are healthy food menu QSRs in the USA ie Au bon Pain, Panera Bread, Mendocino farms that seem similar to OLI and doing well , even good old Subway , so doubt can blame a healthy food menu as the issue .
Slow service like you point out , mechanistic employee structure , (too many chiefs not enough shop floor staff) , inappropriate AND often unavailable menu , all hurt top line and make opex fixed costs higher per unit sold .
