It's clear EUC is not being traded on fundamentals. Can someone explain to me how the shorting process works? If a stock is heavily shorted can that impact on the value of the share price and if so how? Thanks

Shorting is the opposite to normal trading. You borrow and then sell the shares first and then you buy them back to close the trade. If you buy back lower than you sold you keep the difference. I'm not sure if EUC is able to be shorted however.
