Looked up Icefresh to see what it was - sounds like a breath mint!

"Icefresh has developed a patent-pending defrosting technology that can change the supply chain for high-value proteins and seafood in particular. With Icefresh technology the products are deepfrozen and shipped by sea instead of air. When defrosted in the market, the seafood is as fresh as it was when harvested at a cost substantially lower than traditional airfreight and with an environmental footprint that is significantly lower."

So shipping by sea instead of air, accounts for most of the savings. Now that I know that, the ship and plane icons on the presentation comparison make more sense.
