This video of a Brisbane to Adelaide intermodal with 11 of the 65 wagons having LAU railable containers shows how the company is continuing to see good volumes. This particular train operates twice a week via Sydney and may have extra loading attached there. This is a low frequency compared with Brisbane to Melbourne or Melbourne/Sydney to Perth intermodals, all of which tend to be longer, in many cases far longer and heavier.

The empty container flats aren't just coupled because rail operator Pacific National feels like it: there'll typically be an imbalance of freight somewhere:
Unfortunately it's not easy to locate videos of say total LAU truck movements in say a 12 hour period along say the Newell or Sturt Highways, so one tends to have a better picture of rail movements thanks to dedicated railway enthusiasts who know when trains are arriving and hence film them.
Nor can we normally obtain a pictorial record of LAU-handled produce or other freight being loaded into the bellies of passenger planes for export, or an up-to-date record of LAU"s busy warehouse operations.
