Reyni- You are partly right in your analogy but:
Helium like all inert gases exists as atoms not molecules. To quote Wikipedia-
"A helium atom is an atom of the chemical element helium. Helium is composed of two electrons bound by the electromagnetic force to a nucleus containing two protons along with two neutrons, depending on the isotope, held together by the strong force."
CO2 comes out of coke because CO2 under pressure forms carbonic acid H2CO3 when it REACTS with water, reduce the pressure and H2CO3 becomes unstable and forms H2O and CO2.
