There wont be any impact to the social listening tool. The tool only listens to what people a publicly saying or sharing on Facebook/Instagram. Apples new privacy options effects apps like Facebook talking to other apps installed on the phone to gather information. I'm 99% sure this doesn't effect us.
As for Michelle talking about the AI, there has been past interviews where she has discussed the AI with regards to clinical trial prediction. The clinical trial recruitment and prediction tool were once the same platform, then split in two. You will have to look through past recent threads to find these interviews, but I doubt they will go into as much information as you are looking for. There was an announcement in September(?) after the first clinical trial prediction test run that went into to details about results.
Plenty of YouTube videos discussing how AI/Machine learning works and can be used to sort through data, it's becoming a common tool for sorting data.
