I have had voip lines over 4 locations, business and home for about 3 years and have hardly ever been affected by outages. Sometime the calls can be a bit broken up but not often.
Most others I know that use VOIP have similar experiences.
As for letting people know, sure but don't make a marketing fuss about it as you point out, it can be a negative rather than a positive.
When Henry Ford sold model T cars I doubt he pushed the negatives of that product and it had them in spades compared to the horse. But it had overwhelming advantages such as with VOIP where it is all about lowering costs and increasing flexibility.
