Majority of buildings in Sydney that get built today have plastic piping on the internal walls of the apartments and copper main risers that travel up the building , however they have brought out a product called aquatherm which is thick plastic which you can use as the mains throughout the building , I do the maintenance on a few new buildings that use this aquatherm and it is extremely problematic ,
Also one of the advantages plastic had over copper was that it was crimped where as you had to weld the copper , however now you no longer need to weld the copper as there are copper crimping tools , so I have noticed that a lot more plumbers now use copper for smaller jobs as it is just as quick to install ,
Personally I would never install plastic if I was building a house , who knows what sort of contaminants it puts through the water ! ( and yes Kalenn the pests do enjoy the plastic )
Still plenty of copper being used in the plumbing industry , not as much as before but still plenty ,
