They can change the recipes to combat inflation on selected ingredients and suppliers, not be locked into $12 lettuce for the sake of it like KFC (now substituted to cabbage). They also buy regularly 1 week before they need the ingredient and are not locked into longer-term off-take agreements like supermarkets.
Ultimately, supermarkets and wholesale customers have the buying power and the growers can get stuck with excess stock at stupid prices currently.
The fix for high prices is high prices!
