Regarding the fluctuating debt, my understanding is that when trading large tonnages of grain, you need access to large voumes of capital to fund your trade book. Borrow big sums in the commercial debt market to pay farmers for their grain and then rely on your trade team to make a margin. With large tonnages of grain a ta higher value, you need more trading capital.
And don't worry about weather damaged grain - people with experience in the trade tell me there is money to be made trading off-grades. Even when weather damaged, there is still a market for it.
