re: a good dessert wine ..sheephouse? Sure is hanrahan...the solera or solero method. We've been doing it for quite some time with a 40 gallon oak cask purchased originally from Brown Bros Millawa. Every couple of years we take out 10 gallons and bottle it and replace the 10 gallons with new material from the vineyard... Works well.

Have to say my faves are very old tokays and muscats...
