    Aubergine parmigiana:

    Layer the following in an oven tray: Four servings of sliced and fried aubergines.

    Four servings of sliced burrata mozzarella.

    Canned chopped tomatoes simmer to reduce by half. Grated parmesan.

    Dried bread crumbs.

    Basil and / sage leaves.

    And ‘some’ of the following if desired:

    Anchovies.

    Dried bread crumbs.

    Capers.

    Pancetta.

    Bake at 175 c for 30 to 40 minutes.

    Serve with sauce made by heating only the following:

    200 ml double cream.

    75 gm grated parmesan.
