Pulse in the food processor the following:
1 cup pineapple juice
75 gm eta or tomato sauce
50 gm brown sugar
1 small onion
½ dozen cloves garlic
1 chili or 1 teaspoon jerk paste
1 to 3 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
2 splashes soy sauce
2 splashes rum
2 teaspoons mustard
1 teaspoon ground black pepper
A few splashes liquid smoke
In a baking dish marinate four servings of chicken for at least ¼ hour
Bake at 180 c for ½ hour or barbecue in the charcoal webber with the lid on
