The greeks would bash occy onto rocks to tenderise it, maybe it needs that if fresh and they had not got onto the idea of freezing them.
As per my post on occy in the other thread, boiling with vinegar (really don't know if vinegar makes a difference) does the trick. As I mentioned I had to cut down the boiling time as the occy became far to tender
