That sound good rule. Was gonna do a recipe that involved coke also so for the point of us all getting some different ideas for the Barbie this summer thought i would go with this one instead........
2kg pork ribs (adjust recipe for more or less)
Marinade:
1 can/stub beer of your choice (please no blonde this is mans dish after all!) recently tried it with Guinness which was good.
1tsp ground cummin seeds
1tbs ground fennel seeds
1/2tsp ground cloves
1tbs fresh thyme leaves
1tbs fresh rosemary leaves, finely chopped
1 onion grated
zest and juice of 1/2 an orange
5 cloves of garlic
6tsp smoked paprika
1/2 cup tomato sauce
75ml balsamic vinegar
75ml olive oil
5 bay leaves
salt and pepper
I prefer to soak the ribs in the beer for at least 4-5 hours first but you can throw it in with the marinade if in a hurry. Marinate ribs in baking tray with above ingredients for couple hours. Cover with foil and cook at 150c for about 3 hours(meat should pull away from bone easily). Crank the Barby, get a few beers and grill those little suckers on med-high heat while basting. While doing this have the sauce reducing a bit in a pot on the barbie. Serve with hot sauce and ice cold beer. BBBUUUUUUURRRRPPPP!!!!!
