Steak Diane:

Barbecue four sirloin streaks on the charcoal webber.

Reasonable well done on one side and only slightly on the on the other side so they are still medium rare.

Sauce:
In a pan fry 4 diced shallots or 1 medium onion or ½ large onion in a little butter until softened.

Then add 50 to 100 gm button mushrooms and continued to fry for up to 5 minutes.

Then add some of the following:
1 cup cream.
1 cup of stock.
½ cup rendered beef fat.
¼ cup brandy or cognac.
1 to 2 tablespoons Worcestershire.
1 tablespoon soy sauce.
½ to 1 tablespoon Dijon mustard.
½ to 1 teaspoon pressed garlic.
A few splashes of smoked tobacco sauce.
Finish or serve with a small handful of chopped parsley complete with stalks.
