Beans and sausages:
Fry the following:
500 gm sliced Andouille smoked sausage.
1½ cups chopped onion.
1½ cups chopped capsicum.
1½ cups chopped celery.
Then add the following and simmer for ¼ hour:
2 cans black beans.
1 small can tomato pasta sauce.
1 cup chicken stock.
2 cloves pressed garlic.
1 teaspoon dried thyme.
1 teaspoon dried oregano.
½ teaspoon pepper.
A pinch of cayenne pepper or to taste.
2 bay leaves.
2 tablespoons soy sauce.
2 tablespoons Worcestershire.
½ dozen anchovies.
Turn off and leave for at 4 hours.
Reheat.
