Pork:
Brine for ¼ day pork chops in the following:
1 l water.
2 tablespoons rock salt.
2 tablespoons soy sauce.
1 tablespoon of sherry vinegar.
¼ dozen jumpier berries.
In a pan fry in butter and oil.
Do not overcook.
Serve with mushroom rendered beef fat masala stock and cream sauce.
