Deconstructed veal stew:
In a saucepan fry the following:
150 gm sliced carrots.
150 gm onions.
150 gm sliced leek.
150 gm sliced celery.
1 grated apple.
Zest of ½ orange.
½ dozen anchovies.
Then add the following and simmer for a few minutes:
1000 ml veal stock.
A bouquet of parsley stalks.
2 bay leaves.
3 sprigs of lemon thyme.
¼ dozen pepper corns.
3 cloves.
Soy sauce.
For the sauce fry in a pan the following:
100 gm button mushrooms.
25 gm baby onions.
A few knobs of butter.
Then add 150 ml cream.
Thicken slightly with corn flour and brandy or sherry.
Serve the soup with the following:
250 gm sliced raw veal stir fry marinated in soy sake Worcester and xo.
A swirl of the sauce.
