    Lamb Ragu:

    Brown the following:
    1 sliced carrot.
    1 sliced celery stalk.
    1 dice onion.
    500 gm lamb mince or one piece of lamb.


    Then add the following:
    800 gm canned whole tomatoes.
    2 cups chicken stock.
    ½ cup red wine.
    2 - 3 rosemary sprigs.
    2 bay leaves.

    And some of the following:
    Soy sauce to taste.
    Worstershire to taste.
    1 dozen anchovies.
    The peel of half an orange.
    1 tablespoon scrimp sambal paste.
    1 dessert spoon xo.

    Alternatively roast 500 gm lamb flake to serve in lieu of the mince.

    Serve with the following:
    500 gm Pappardelle pasta cooked one minute less than recommended.
    Grated Pecorino cheese.
