    Roast beef lamb or pork:

    Marinate and baste:
    2 kg beef lamb or pork.
    1 cup apricot juice.
    ½ cup apricot jam.

    3 tablespoon soy sauce.

    Barbecue on the charcoal webber.

    Sauce:
    In a pan fry the following:
    2 chopped shallots

    Than add the following:
    1 cup apricot juice.
    1 cup cranberry.
    1 piece chopped thyme.
    1 piece chopped paisley
    2 tablespoons brandy.
    1 tablespoon of soy.
    1 tablespoon Worcester.
    1 tablespoon red wine vinegar.
    ½ tablespoon chipotle paste.
