    Risotto:


    In a medium saucepan brown the following:
    2 cups arborio rice.
    1 medium diced onion
    50 gm pre-soaked dried porcini.
    4 tablespoons smoked butter.
    2 tablespoons olive oil.

    Slowly add the following while stirring:
    4 cups chicken and porcini stock.
    ½ cup dry white wine.
    2 cloves pressed garlic.
    1 tablespoon sage leaves.

    And lightly season some of the following:
    Anchovies or paste.
    Fish sauce.
    Miso.
    Scrimp sambal paste.
    Soy sauce.
    Xo sauce.

    Simmer until only firm to the bite.

    Serve with ½ cup Parmesan.
