Makattack I wouldn't say it's prolific but I've noticed some Asian take always also stating, 'Cash only.' That to me advertises 'I don't declare all income' and 'Thief, rob us upon closing.'

I agree that the banks are too critical with self employed borrowers. I understand you must have 2 yrs of consistent income, minimum. That's no different to anyone else showing a stable employment history. But the other criteria you mentioned does seem to discriminate. It reminds me when the banks didn't accept regular overtime or the fact that people don't have a long term employment period with one employer anymore.
Does it relate to certain types of self employment or is it across all occupations?
