Butter chicken
cut one chicken into pieces
bake in the oven, mainly on one side, until cooked.
sauce:
in a medium sized pot, simmer the following for at least five minutes:
200 to 400 gm can tomato puree or 100 to 200 gm tomato paste
25 gm cultured butter (optional)
2 teaspoons garam masala
2 teaspoons sweet paprika
2 teaspoons ground coriander
1 tablespoon grated fresh green ginger
½ teaspoon chili powder (more or less to taste)
1 cinnamon stick
6 bruised cardamom pods
1 tablespoon sugar or maple syrup
A few splashes of light soy sauce to taste
a few splashes of liquid smoke
Turn off and finish with the following:
½ cup cream
¼ cup plain yogurt
½ to 1 tablespoon lemon / juice (optional)
Thin down with a little water to suit
