Strawberry and white chocolate cheesecake:
In a cake tin lined with baking paper.
Then arrange the following:
400 gm hulled strawberries.
50 gm glazed cherries (optional).
A splash of rum (optional).
A splash of vanilla essence (optional).
In a heatproof bowl, melt 200 gm white chocolate, either over a pan of hot water or in the heat in the microwave in short spurts. Stir frequently so the chocolate melts evenly.
In a separate bowl, beat 400 gm cream cheese, with one dessert spoon of boiling water until smooth.
Then beat in the chocolate and 4 tablespoons of cream into the cream cheese.
Pour into the cake tin mixture over the solid ingredients.
Refrigerate until set.
