    My caldeirada de peixe (Stew of Fish) turned quite well

    About a cup of the following roughly copped
    Red onion
    French shallots
    Red capsicum
    2 x red chilli's
    Few cloves of garlic

    Into a large pot with extra virgin olive oil medium high heat toss/stir until all has soften

    add 1lt fish stock and bottle of white wine, few strands of saffron and salt to taste.

    Add potatoes and bring to slow boil, cook until potatoes are just about cooked

    Add fish/seafood of your choice, I used the following
    Salted cod (had been soaked to remove excess salt)
    Smoked red cod
    Squid rings
    Prawns

    Continue cooking until seafood is cooked, doesn't take long and you don't want to over cook
