Calypso pork beef chicken or lamb:
In a non-metallic pan marinate 1.5 to 2 kg of pork in the following:
1 small onion chopped onion.
1 cup pineapple juice.
½ cup rum.
½ cup brown sugar or maple syrup or molasses.
4 cloves minced garlic.
A knob of minced ginger.
4 broken bay leaves.
And ‘some’ of the following if desired:
1 teaspoon ground nutmeg.
1 teaspoons clove.
1 teaspoon ground allspice.
½ teaspoon liquid smoke.
Half dozen splashes smoked tobacco sauce.
zest to taste.
a few splashes light soy sauce.
Barbecue on the charcoal webber.
