    Well I have perfected the recipe over a few months of trialling.

    12 eggs (room temperature) cracked into a large bowl then beat with electric mixer until light and fluffy-do not separate white from the yolks. Then gradually add one cup of logicane low GI sugar (or raw or white) continue to beat until thick and creamy. Add some apple cider vinegar (about a tablespoon) and beat. Sift 2 thirds cup hemp flour (I use the macro woolworths brand) with 4 thirds brown rice flour (or gluten free flour) (2 cups flour in total) and 1 tsp bi carb soda then gently fold all flour into the egg mixture.
    Pour into large cake tin and bake at 160c (fan forced) until set.

    Fill with your favourites. I prefer fig jam and thick greek yoghurt.
    btw Also use this sponge to use as a base for a cheesecake.
