why pickle them when you've cooked fresh ones ?
Try this, boil beets, skin and coarse grate.
Lightly saute onions, add beetroot, then season
with a little vinegar and sugar. (to suit your taste).
Approx one onion to 5 beets.
Beautiful warm/hot, but o.k. cold too.
