Chawanmushi
In a medium bowl mix only the following:
2 cups warm water or chicken stock.
3 large eggs.
1 tablespoon mirin.
1 desert spoon dashi powder (Japanese soup stock granules).
¼ teaspoon toasted sesame oil.
½ teaspoon miso.
Pour into 4 ceramic bowls or cups.
Steam for 10 to 15 minutes until almost set.
Place some of the following on top and steam for another minute:
½ cup frozen peas.
12 baby cooked shrimps.
4 large finely sliced shiitake mushrooms.
2 scallions finely sliced.
