Brazilian cheese bread
Mix the following in a medium bowl or food processor until smooth:
1.5 cups / 170 grams tapioca flour (tapioca starch).
2/3 cup milk.
½ cup / 100 grams total grated cheddar and mozzarella cheese.
1 egg at room temperature.
1/3 cup olive oil.
1 teaspoon salt.
¾ fill mini muffin or cupcake tin.
Bake for 20 minutes at 200 c.
