In a medium saucepan fry or carnalise the following:
1 diced red onion.
1 splash oil.
Add the following and simmer for ten minutes:
1000 to 1500 ml total vegetable or chicken stock clam juice and / or seafood stock.
400 gm tin chopped tomatoes or tomato soup.
200 to 400 gm tin cooked kidney or black beans, drained and rinsed (optional).
2 to 4 dried chipotle chilis, finely chopped, or 1 tablespoon chipotle chili paste to taste.
½ to 1 cup wine.
1 to 3 tablespoon tomato paste.
2 cloves chopped garlic.
2 teaspoons cumin seeds.
1 teaspoon dried oregano.
1 teaspoon brown sugar.
A few splashes light soy sauce.
Serve with the following:
seafood.
1 ripe avocado
½ bunch of coriander.
Lime juice.
Salt and freshly ground black pepper.
