chicken makhani / butter chicken
i'm making butter chicken for the children,
as it is currently their favorite!
there is no set way of making butter chicken
and
every time i make it, it is different!
grilled on the webber ½ kg of boneless chicken pieces, with a splash of liquid smoke
the sauce:
fry:
1 minced onion in butter
add:
one cup of tomato puree or half a cup of tomato paste
tandoori paste to taste
one tablespoon of mint
one tablespoon of coriander
1 desert spoon of minced garlic
1 desert spoon of ginger
1 teaspoon of garam masala
chili to taste
cayenne pepper to taste
pinch of cardamom (optional)
pinch of turmeric (optional)
pinch of cumin (optional)
pinch of fenugreek (optional)
a few star anise (optional)
a few bay leafs (optional)
a little zest (optional)
a few drops of liquid smoke (optional)
a little soy sauce (optional)
yoghurt to taste (optional)
cream to taste (optional)
water (optional)
boil for a short while
