    Butter chicken:

    Blend the following in the food processor:

    1 large onion.

    1 cup cashews.

    40 mm ginger.

    3 cloves garlic.

    In a medium saucepan fry the following:

    The above.

    75 gm butter.

    Then add the following:

    400 gm can tomato purée.

    1 cup chicken stock.

    1 smoked chilis or ½ dozen of smoked tobacco sauce.

    ⅓ cup tomato paste.

    4 cardamom pods, bruised

    1 dozen anchovies.

    1 piece of orange zest.

    2 teaspoons garam masala.

    2 teaspoons ground coriander.

    ½ teaspoon chili powder.

    1 cinnamon stick

    1 teaspoon paprika.

    Finish off with the following.

    ¾ to 1 cup cream.

    ½ cup plain yoghurt.

    A few splashes soy sauce.

    A few splashes Worcester sauce.

    A few splashes rice wine.

    A few splashes xo.

    Serve with barbecue chicken or prawns.
