Stone fruit sambal:
In a small bowl combine the following:
2 ripe peaches or other stone diced stone fruit seared if desired.
½ cup strawberries.
50 gm shredded coconut toasted.
1 diced shallot.
2 tablespoons lime juice.
2 tablespoons fish or soy sauce.
1 tablespoon honey or maple syrup.
3 teaspoons tamarind paste.
½ teaspoon chili powder or 1 teaspoon smoked tobacco or 2 teaspoons xo sauce.
