Kung Pao Chicken
Barbecue on the charcoak webber two servings of chicken on sliced root vegetalves.
In a pan fry the following:
1 medium sliced spring onion.
1 tablespoon sliced peeled ginger.
½ teaspoon Szechuan peppercorns.
5 dried small red chiles.
2 sliced or press garlic cloves.
1 tablespoon rice vinegar.
2 teaspoon soy sauce.
2 teaspoon granulated sugar.
1 teaspoon lao chou soy sauce.
1 teaspoon Shaoxing wine or dry sherry.
½ dozen splashes smoked tobacco sauce.
Finish off with ½ cup chick stock and ½ teaspoon corn flour.
Slice and serve with sauce.
