Brine the chicken in the following warm water:
8 cups water.
⅓ cup cocking salt.
¼ cup brown sugar.
2 tablespoons dried sage.
2 tablespoons dried basil, or to taste.
½ heads pressed garlic.
1 dessert spoon crushed black peppercorns.
2 bay leaf.
Coat chicken in butter.
Barbecue or roast in a pan over sliced root vegetables.
