Sichuan chicken
Marinate for at least 15 minutes:
4 skinless and boneless chicken thighs or other chicken pieces in the following:
One tablespoon of rice wine
2 cloves of crushed garlic
2 cm piece of grated root ginger
½ deseed diced chili
½ teaspoon crushed sichuan peppercorns
A couple of squeezes or orange juice
Zest of ¼ orange
A splash of light soy sauce
A splash of fish sauce
Pinch of caster sugar
Fry in at least 10 mm of oil or barbecue or roast
