Chili
In a medium saucepan fry the following until brown:
1 medium diced onion
1 diced capsicum
When brown add the following and simmer for ¼ hour:
2 or 3 cup veal glaze or jus
¼ cup eta sauce
¼ cup tomato paste
And season with ‘some’ of the following:
5 cloves crushed garlic
1 tablespoon brown sugar
1 desert spoon ground cumin
1 desert spoon oregano
1 dessert spoon coco powder
2 or 3 dried chilli or 1 desert spoon jerk paste
1 teaspoon sweet paprika
A few splashes soy sauce
A few splashes bourbon
Poach the following:
500 gm mince or simmer for ½ hour or more
1 to 2 cans rinsed beans
