Here's an excellent survey of the Chinese dairy market by Keith Woodford who spends a lot of time in that country and is extremely familiar with its dairy industry. It's written from a NZ point of view but is relevant also to Australia's situation as an exporter to China.
It may come as a surprise to many that China is 85% self-sufficient in dairy, and NZ, Australia and the EU are fighting over the other 15% (EU is the biggest supplier). But still it's a crucial market for NZ and presumably for Australia.
