    Stuffing squares to serve as entrees or with meat at Christmas:

    Pulse the following in a food processor:
    300 gm total bread panettone pandoro or quality sausage meat.
    1 small onion.
    1 apple.
    200 gm sliced smoked pancetta.
    100 gm vac packed chestnuts.
    1 sticks celery.
    1 dozen sage leaves.
    ¼ dozen cloves garlic.
    Zest of ½ lemon.

    And some of the following if desired:
    1 egg.
    ¼ cup dried apricots, julienned.
    ¼ cup dried sour cherries.
    ¼ cup golden raisins.
    1 dozen anchovies.

    Line a slice tin.

    Place in tin.

    Sprinkle with water or chicken stock if required.

    Top with panchetta.

    Bake at 180 c for ¾ hour.
