Christmas barbecue roast:
3 kg of beef chicken lamb or pork.
Apply / rub paste made by mixing ‘some’ of the following:
5 tablespoons olive oil orange pineapple apple juice honey and / or maple syrup.
4 tablespoons chopped mint rosemary sage thyme.
3 tablespoons tomato paste.
3 tablespoons yellow mustard seeds.
3 tablespoons korean chili paste.
3 tablespoons fennel seeds.
3 tablespoons sake mirin sherry or brandy.
2 tablespoons garlic salt or garlic.
2 tablespoons celery salt.
2 tablespoons of zest.
2 tablespoons of light soy sauce.
1 tablespoon miso.
Cut into 1 kg pieces for faster cooking if desired.
