Christmas roast pork
Cut 2 kg of pork belly into strips.
Roast at 135 c for at least 1.25 hours in 'some' of the following:
1 cup oil or fat.
2 sliced onions.
6 fresh thyme sprigs.
8 cloves smashed garlic.
1 fresh rosemary sprig.

6 bay leaves.
15 to 100 gm tablespoon coarse salt or some miso.
1 desert spoon herbes de Provence.
1 desert spoon ground black pepper.
1 teaspoon chopped thyme.
1 teaspoon chopped sage.
½ teaspoon ground coriander.
¼ teaspoon ground allspice.
a few splashes of liquid smoke.
Turn occasionally.
Also roast vegetables.
Serve with plum or cherry sauce made by frying in a small saucepan, in little oil until brown:
2 finely chopped shallots.
2 clove finely chopped garlic.
Add the following and simmer for 5 minutes:
2 cups chopped canned black doris plums or cherries.
2 splashes brandy.
2 splashes liquid smoke.
½ cup chicken stock.
½ teaspoon chinese five spice.
¼ teaspoon chilli powder.
