Don't need to add anything.
Rinse all the blood/scum off in the sink,
with running hot water.
Put the S.S. in a large pot, fully cover with cold water,
and bring it to a simmer, for 3 or so hours, 'till tender.
I just cut a little piece off the end to test it,
then leave it simmering for at least another 1/2 an hour,
to make sure it is tender all the way through.
