Its their scaling: median/mean value is good at 295ish, but instead of incrementing up/down by correct price amount, they are rescaling difference to percent, then adding subtracting up to 100% from the $US/lb number to get close to 195 - 395ish.
So mapping 295 + change in price → 295 + change in percent out of 100.
