I buy Orange Roughie when it is available from my local fish shop. The fish I used to buy was flathead tails, but now all I see available is called "flathead" and its not as sweet as the tails. Still, expensive. However, I just buy what I want without considering price these days, particularly as in LockDown Melbourne so buy everything locally. I am fortunately within an easy stroll of a very good strip shopping centre. Wheel a big trolley/jeep to the shops, more often than not, early in the morning before many people are around..... used to be able to get fresh sardines at a very cheap price, but no longer. I can get them cleaned and headless in a box but cost far more per kg than the fresh scoop of sardines which were my favourite. Only took a short time to get them prepared for dipping in egg and breadcrumbs and shallow fry or even airfry them....... serve with salad. How easy and yummy they were.....
