    Ossobuco alla Milanese:

    Barbecue 4 30 mm pieces of cross-cut veal shank.

    On the barbecue fry the following:

    2 diced onions.

    2 sticks diced celery.

    1 diced carrot.

    Then add the following:

    2 pints chicken stock.

    1 pint white wine.

    ½ pint veal stock.

    ¼ dozen cloves garlic.

    1 sprig of thyme.

    1 bay leaf.

    2 tablespoons tomato purée.

    1 dozen anchovies.

    2 strips of orange peel.

    20 gm of dried porcini mushrooms.

    ¼ cup rendered beef fat.

    2 tablespoons soy sauce.

    1 tablespoon fish sauce.

    When cooked thicken slightly with corn flour.
