When I was back in Oz I used to home brew, spirits though.. I had a water boiler like those you see at a soccer match as a kid with a condenser set up mounted on the top. Generally 7 - 10 days and you had yourself another 5 litres of 96-98%.. then water it down, run it through the charcoal and let it soak in wood chips. Used to use the Jack Daniels Barrel wood chips, smoke them in foil on the BBQ and it would come out tasting quite similar to Jameson... best to filter it through a coffee strainer of some sorts after soaking though. Though about bringing the kit over to Thailand or at least the condenser but figure it would go missing at customs out of total confusion.
